Woodear mushrooms are a classic in Asian dishes like hot and sour soup, and Szechwan and Hunan cuisine. They add a chewy, crunchy texture, and rich, jet black color to stir fries and sautees. They are a natural source of iron, protein and fiber, providing almost half the recommended daily fiber intake for adults. Wood Ear mushrooms are also a good source of vitamins B1 and B2.
Dried mushrooms can be reconstituted in any kind of warm liquid (wine, broth, cream, ect.) for 15 - 20 minutes, and then used in any application in which fresh mushrooms are called for. Try them as a base for soups and sauces, combine with eggs in a scramble or omelette, cook into a risotto, or toss with pasta.
